Line a rimmed baking sheet with a silpat mat or coat with some cooking spray. Using the back of a fork, mash bananas in a medium bowl until they are broken down. Add in oats and gently stir until all of the oats and bananas are mixed together and look like a thick cookie batter. Now your ready to add the chocolate chips! Sprinkle them into the dough and stir until they are just mixed throughout. Scoop one heaping tablespoon of the dough into your hands and free form into a cookie*. Place on cookie sheet and continue until you have 12 cookies. Cook for 12-15 minutes or until set through and lightly golden. Cool and enjoy! *NOTE: these cookies will not spread in the oven so be sure to form them into a cookie before placing on baking sheet. Welcome to Oh Yum with Chef Anna Olson! In this video Chef Anna guides you on making these delicious classic chocolate chip cookies. Click on 'SHOW MORE' for baking directions. Ingredients for the chocolate chip cookies: ½ cup unsalted butter, at room temperature ½ cup packed light brown sugar ½ cup granulated sugar 1 large egg, at room temperature 1 tsp vanilla extract 1 ¼ cup all-purpose flour 1 Tbsp cornstarch ½ tsp baking soda ½ tsp salt 1 ½ cup chocolate chips 1 cup lightly toasted, coarsely chopped pecans (optional) Chocolate Chip Cookies Baking Directions: 1. Cream the butter with the brown sugar and granulated sugar together well. Beat in the egg and the vanilla. 2. In a separate bowl, sift the flour with the cornstarch, baking soda and salt. Add this to the butter mixture and stir until blended. Stir in the chocolate chips and pecans (if using). 3. Using a small ice cream scoop or a tablespoon, scoop spoonfuls of dough (about 2 Tbsp) shape them into a ball and place onto a parchment lined baking tray or a plate. Chill the scooped cookies for at least an hour, or once chilled, the cookies can be frozen for baking later. 4. Preheat the oven to 325ºF. Arrange the chilled scooped cookies onto parchment-lined baking trays, leaving 3 inches between the cookies. Bake for 15-18 minutes, until browned around the edges. Cool the cookies on the baking tray. If baking cookie dough that has been frozen, arrange the frozen cookies on the baking tray and let them thaw for 20 minutes at room temperature before baking as above. Let cool slightly and enjoy. Line a rimmed baking sheet with a silat mat and set aside. Mash banana in a large bowl using the back of your fork. Add in one beaten egg, stevia, coconut oil, rolled oats, baking powder and salt. Stir until everything is well combined. Add in the coconut, almond, and chocolate chips and gently stir until all of the mix-ins are well incorporated. Scoop one tablespoon of batter and shape into a cookie. Place on baking sheet and continue until you have worked through all the dough (you will need to work in batches). Once melted, the butter will begin to sizzle and foam. Continue cooking butter until foaming subsides and brown bits appear on the bottom of the kettle. After 5-7 minutes, the butter will turn a deep golden color and the butter will smell toasted ( I promise you will notice the nutty smell of the butter). Set aside and let butter cool to room temperature and come back to a soft but solid state. While the butter is cooling, you can toasted your oats. Preheat oven to 350 degrees and spread oatmeal on small baking sheet. Place in oven for 8-10 minutes. You won't see a change, but the oats will smell toasted! Remove from oven and let cool. Once the butter has solidified, scrape into bowl of electric mixer. Cream butter, brown sugar and white sugar until a little lighter and fluffy in texture. Add egg and beat to incorporate. With mixer running, add baking soda, oats, salt and finally flour. Mix to incorporate and finish with butterscotch chips. Using a cookie scoop, make cookies on parchment-lined cookie sheet (approximately 1 tablespoon each). Bake in preheated 350-degree oven for 10-12 minutes. It is easy to over bake cookies, so bake until the edges are just set but centers are soft. Remove from oven and leave on baking sheet for 3-5 minutes to finish baking. Then cool on a wire rack.
