Namkeen Gosht / Bhuna Namkeen Gosht (Namkeen rosh) Recipe by Food Fusion (Eid Recipe)

This is our version of famous Peshawari dish Namkeen Gosht Namkeen Gosht / Namkeen Rosh Recipe in English: Ingredients: • Oil 2-3 tbs • Mutton with fat 1 kg + ½ kg bones • Adrak (ginger) paste 1 tbs • Lehsan (garlic) paste 1 ½ tbs • Pyaz (onion) large 1 • Dhania (coriander) crushed 1 tbs • Kali mirch (black pepper) 1tbs / to taste • Zeera (cumin seeds) roasted & crushed 1tbs • Namak (salt) 1 tbs or to taste Directions: • Heat oil in a pan and add all bones and meat, fry until it changes color, cook for 2-3 minutes. Add ginger and garlic paste and cook for 2 more minutes. Add sliced onion and cook than add all dry spices. Mix and cook for few minutes. • Add water enough to dip all the ingredients. Cover and cook for 1 hour and 15 minutes on low flame. • For namkeen gosht with gravy (shorba), once meat is completely tender serve it with gravy (shorba). • For bhunna namkeen gosht , cook meat on medium high flame until water dries and oil separates. It is ready to serve. Namkeen Gosht/Namkeen Rosh Recipe in Urdu: Ajza: • Oil 2-3 tbs • Bakre ka gosht charbi ke sath 1 kg + ½ kg hadiyan • Adrak (ginger) paste 1 tbs • Lehsan (garlic) paste 1 ½ tbs • Pyaz (onion) large 1 • Dhania (coriander) crushed 1 tbs • Kali mirch (black pepper) 1tbs / to taste • Zeera (cumin seeds) roasted & crushed 1tbs • Namak (salt) 1 tbs or to taste Banane ka tareeka: Oil garam karain aur mutton hadion samet shamil karke kuch dair bhoon lain . Color change hone par adrak paste aur lehsan paste shamil kar ke 2 minute aur bhoonen. Pyaz shamil karke kuch dair pakayen phir saare khushk masala shamil karke 2-3 minute bhoon lain. Ab itna paani shamil Karen ke saare ajza sahi se cover hojayen. Dhak kar 1 ghanta 15 min tak halki aanch par pakayen. Sharba wale namkeen gosht ko gosht gal jane par shorbe samet serve Karen. Bhunna hua namkeen gosht keliye, pani ko khushk karklen aur oil alaihda hone par serve Karen.

Here is our take on Murgh Musallam, give it a try and enjoy. #HappyCookingToYou Written Recipe: https://goo.gl/JT8MUY More Recipes on: http://www.foodfusion.com Murgh Masallam Recipe in English: Ingredients: -Dahi (Yogurt) 2 tbs -Lal mirch powder (Red chili powder) 1 tbs or to taste -Dhania powder (Coriander powder) roasted & crushed 1 tbs -Garam masala powder 1 tsp -Zeera powder (Cumin powder) roasted ½ tbs -Namak (Salt) 1 tsp or to taste -Kashmiri lal mirch (Kashmiri red chilies) powder ½ tsp -Adrak lehsan paste (Ginger garlic paste) 1 tbs -Whole chicken 1 kg approx. -Badam (Almonds) ½ Cup -Khashkhash (Poppy seeds) 2 tbs -Kaju (Cashew nuts) 14-15 -Pyaz (Onion) fried 2 medium -Pani (Water) ½ Cup or as required -Cooked rice -Kishmish (Raisins) 1 tbs -Anday (Eggs) hard boiled 2 -Oil 1 & ½ Cups -(Kashmiri red chilies) powder ½ tsp or as required -Dahi (Yogurt) whisked 1 Cup -Lal mirch powder (Red chili powder) 1 tsp or to taste -Namak (Salt) ½ tsp or to taste -Dhania powder (Coriander powder) 1 tsp -Zeera powder (Cumin powder) 1 tsp -Garam masala powder ½ tsp -Pani (Water) ½ Cup or as required Directions: -In bowl,add yogurt,red chili powder,coriander powder,garam masala powder,cumin powder,salt, kashimir red chili powder,ginger garlic paste and mix well. -Add cuts/marks on whole chicken and rub the marination all over the chicken and let it marinate for 4-6 hours or overnight in refrigerator. -In blender,add almonds,poppy seeds,cashew nuts and blend well. -Add fried onion and water,blend until well combined & set aside. -Stuff the marinated chicken with cooked rice,raisins and boiled eggs and tie the whole chicken with thread and use skewers to hold the chicken together. -In a wok,add oil and place stuffed marinated chicken and fry from all sides until golden brown and sprinkle kashmiri red chili powder and keep turning sides in between. -Cover and cook on low flame 6-8 minutes each sides and keep changing sides in between & set aside. -Remove excess oil,add grinded paste and mix well. -Add yogurt and mix well. -Add red chili powder,salt,coriander powder,cumin powder,garam masala powder and mix well for 2 minutes. -Add water,mix well and bring it to boil and cook for 2-3 minutes. -Add fried chicken and basting with the gravy,cover and cook on low flame until oil separates (8-10 minutes) and keep changing sides in between and basting with gravy. -Serve with rice.
