How vibrantly colourful it looks! Indeed, this sumptuous soup reflects the same freshness. The complementary flavours of carrots and spinach, perked up further with ingredients like onions and pepper make this soup a great hit. The method of adding some of the ingredients like onions and spinach in sautéed form rather than blending everything gives the Carrot and Spinach Soup a nice mouth-feel too. Preparation Time: 15 minutes Cooking Time: 20 minutes Makes 4 servings Ingredients 1 1/2 cups peeled and roughly chopped carrots 1/2 cup shredded spinach (palak) 1/2 cup peeled and roughly chopped potatoes 1/2 cup roughly chopped onions 2 tsp butter 1/4 cup finely chopped onions 1/2 cup milk Salt and freshly ground black pepper powder to taste Method 1. Combine the carrots, potatoes, onions and 1½ cups of water in a pressure cooker and pressure cook for 3 whistles. 2. Allow the steam to escape before opening the lid. 3. Allow it to cool completely. 4. Once cooled blend in a mixer to a smooth paste. Keep aside. 5. Heat the butter in a kadhai, add the onions and sauté on a medium flame for 1 to 2 minutes. 6. Add the spinach, mix well and cook on a medium flame for 1 minute, while stirring continuously. 7. Add the prepared carrot-potato mixture and approx. ¼ of cup water, mix well and cook on a medium flame for 1 minute, while stirring occasionally. 8. Add the milk, mix well and cook on a medium flame for 1 minute, while stirring occasionally. 9. Add the salt and pepper, mix well and boil on a medium flame for 5 to 10 minutes,while stirring occasionally. Serve hot.

Made with very few ingredients, the Cream of Spinach soup is also easy to prepare. Onion gives it a wonderful flavour, while cream gives it a rich mouth-feel. Since spinach cooks fast, it also takes very little time to prepare this delicious soup that is loved by all because of its vibrant colour and creamy texture. Preparation Time: 15 minutes Cooking Time: 13 minutes Makes 4 servings Ingredients 2 2 1/2 tbsp fresh cream1/2 cups chopped spinach (palak) , washed and drained 2 tbsp butter 1/2 cup finely chopped onions 2 tbsp cornflour dissolved in 1/2 cup cold milk salt and freshly ground black pepper (kalimirch) to taste For The Garnish 2 tbsp fresh cream Method 1. Heat the butter in a deep non-stick kadhai, add the onions and saute on a medium flame for 1 to 2 minutes or till the onions turn translucent. 2. Add the spinach and saute on a medium flame for 1 minute. 3. Add 2 cups of water, mix well and cook on a medium flame for 5 to 7 minutes, while stirring occasionally. 4. Allow it to cool completely. 5. Once cooled, blend in a mixer to a smooth puree. 6. Strain the mixture with help of a sieve and transfer it to a kadhai. 7. Combine the cornflour-milk mixture and the cream in a bowl and mix well till no lumps remain and add it to the spinach puree and mix well. Cook on a medium flame for 2 minutes, while stirring occasionally. 8. Add the salt and pepper, mix well and cook on a medium flame for 1 more minute, while stirring occasionally. 9. Serve hot garnished with cream.
