Chef’s Name: Nauneet Kaur Type: Vegetarian Language: Hindi Recipe Name: Punjabi Baingan Alu (Punjabi Brinjals and Potatoes) Cooking time: 20 Minutes Three Main Ingredients: Baingan, Potatoes, Salt Serves: 4 Ingredients :- 300 grams long brinjals 2 potatoes 2 tbsp oil 1 tsp cumin seeds ½ tsp salt ¼ tsp turmeric powder 1/8 tsp red chilli powder 1 tsp coriander powder 2 tsp ginger-garlic paste Garnish : 1 tbsp green coriander- chopped Method :- Wash brinjals, remove stems and cut in 4 lengthwise. Peel potatoes and cut like thick chips. Heat oil in a non-stick karai and sear the potatoes till tinted. Remove. In the same oil on sim add cumin seeds and sizzle. Add salt, turmeric, red chilli powder, coriander powder, ginger-garlic paste and mix, stir-fry. Add brinjals and potatoes, mix. Cover and cook on sim till done, stirring in between, which takes about 20 minutes. Then take it off heat. Put in a dish, garnish with green coriander and serve hot.
