Peri Peri Chicken Recipe So here's the first recipe of 2018, the one you've all been waiting for, my Peri Peri Chicken Recipe! I use Scotch Bonnet pepper as this gives the marinade a distinct taste and aroma that you don't get with other chillies. I always slice the pepper in half and smell it before adding it to the blender to ensure I select a very aromatic one - be careful you don't want to rub it on your nose! If you are not used to a lot of heat, you may want to start off with half a pepper instead of a whole one. This Peri Peri Chicken Recipe is very simple, you can use chicken legs with skin on (like I did) or remove the skin, I've cooked it both ways and it's great either way. You can also use this marinade on chicken wings, chicken drumsticks or a whole chicken. The longer you leave the chicken to marinate the better, for maximum taste I would recommend marinating overnight, I didn't leave it to marinate for very long and it still tasted awesome! After marinating the chicken, pre-heat the oven to gas mark 6 (200°C, 400°F) and roast the chicken for 35 - 40 minutes. Roast the chicken legs upside down so when you turn them half way through cooking, the chicken will be the right way up, you can brown the skin under a grill/broiler for a better colour which was what I did. You can also place the chicken pieces on a wire rack over an oven tray and roast in the oven, this creates a drier chicken leg or alternatively grill or fry in a pan, a cast iron pan gives the chicken an authentic grilled look. This chicken is also suitable for cooking over a barbecue, so definitely one to try during the summer season. I hope you all enjoy this delicious recipe, don't forget to like, comment and subscribe!
