Let me know in the comments! ♡♡♡ FOLLOW ME! ♡♡♡ FACEBOOK: http://www.facebook.com/LindsayAnnBakes INSTAGRAM: http://instagram.com/LindsayAnnBakes PINTEREST: http://pinterest.com/LindsayAnnBakes TWITTER: http://twitter.com/LindsayAnnBakes WEBSITE: http://www.LindsayAnnBakes.com GET RECIPES TO YOUR EMAIL: http://bit.ly/LindsayAnnBakesEmailRecipes ♡♡♡ THE RECIPE! ♡♡♡ THE BEST Fluffy Cinnamon Rolls Yield: 12 Dough 1 cup buttermilk, very warm (about 110 degrees F) 1 (.25oz) packet instant/rapidrise dry yeast (2 1/4 teaspoons) 1/2 cup white sugar 8 tablespoons unsalted butter, melted, divided 2 tablespoons vegetable oil 2 teaspoons vanilla extract 2 large egg, room temperature 1 teaspoon salt 3 3/4 cups all-purpose flour, plus up to 1/3 cup extra if needed Filling 3/4 cup butter, softened 1 cup packed brown sugar 1 teaspoon vanilla 6 tablespoons white sugar 2 1/2 tablespoons ground cinnamon 1 tablespoon cornstarch 1/8-1/4 teaspoon ground nutmeg, optional Cream Cheese Icing 4oz cream cheese (1/2 an 8oz block), room temperature 1/4 cup (1/2 stick) unsalted butter, softened 1/2 teaspoon vanilla extract 2 cups (1/2lb) powdered sugar, sifted Directions In a large bowl or bowl of your stand mixer, whisk together warm milk, instant/rapidrise dry yeast, sugar, 6 tablespoons of the melted butter, oil, vanilla, eggs and salt. Slowly mix in flour, 1 cup at a time, with a wooden spoon or spatula (or paddle attachment on your stand mixer on low speed) until the flour is incorporated and the dough starts to come together (dough will be tacky to the touch, if it is way too sticky, you may add up to 1/3 cup extra flour, as needed). Then, knead dough, by hand on a lightly floured surface a few times (or on medium speed in your mixer with the dough hook) until it is smooth and and elastic, about 1 minute. Form the dough into a ball and place in a bowl coated with vegetable oil. Roll dough in bowl to coat in oil. Cover with a towel and place it in a warm, draft-free place to rise for about 1-2 hours, or until doubled in size. Meanwhile, spray the bottom of a 9x13 inch baking dish with nonstick spray and prepare the filling. Mix together the brown sugar, vanilla, white sugar, cinnamon, cornstarch and nutmeg. Let butter sit out to come to room temperature and soften. Once the dough has doubled in size, turn it out onto a lightly floured work surface and, using a rolling pin, roll into a 12x18 inch rectangle. Spread the softened butter all over the top of the dough and sprinkle cinnamon sugar mixture on top, so entire surface is fully covered. Roll the dough up tightly, lengthwise, so you have one long 18" log. Cut dough into 12 equal pieces. Arrange them in the prepared baking pan, cut sides up. MAKE TOADAY: Loosely cover and let rise a second time in a warm, draft-free place, until they are puffy and doubled in size, about 1 hour. (To speed up the dough rising process, heat your oven to 200 F degrees and then, turn off the oven heat and let your rolls rise quickly in the warm oven until puffy and doubled in size.) OVERNIGHT METHOD: After placing rolls in pan, instead of letting them rise, cover tightly and refrigerate overnight, or up to 16 hours. The next morning, remove from fridge and let the rolls sit in a warm, draft-free place, until they are puffy and doubled in size, about 1 hour. After the rolls have risen, preheat the oven to 350°F. Brush the remaining 2 tablespoons of butter over the tops. Bake for about 20-25 minutes, until they are golden brown. While the rolls are baking, prepare the icing. Beat together cream cheese and butter until smooth. Add vanilla and powdered sugar, beating until smooth and creamy. Nice looking. Looks like it has a lot of chocolate chips. taste: 2/10 votes. Sweet and buttery flavor with the most chocolate. Not bad at all, but hard to compare to homemade. B- Homemade: From Scratch from the recipe on the bag of the Ghirardelli chocolate chips: https://www.ghirardelli.com/chocolate-chip-cookies-rec1016 (which is practically the same as the Toll House recipe and the Hershey's recipe, just with slightly different amounts of vanilla extract and salt) price: Most expensive to buy all of the ingredients- the chocolate chips alone were $4.99, but cheap option if you have everything at home already. ingredients: 9 time/ease/cleanup: Takes the most time and has the most cleanup but definitely worth the taste pay off. Very easy for scratch made cookies- basically, just mix everything together in a bowl. appearance: winner with 5/10 votes. Was the most flat and not as "pretty". Looks "homemade", but that is part of the appeal. taste: winner with 8/10 votes. Had by far the best flavor. Is rich, buttery and chewy on the inside with a crisp outside. Tastes homemade in the best possible way. C- Store Bought: Grocery Store Bakery price: $4.99 ingredients: 1 time/ease/cleanup: ready to serve and throw away the container. appearance: 2/10 votes. Looks store bought. Not super appetizing. taste: Unanimous loser with 0/10 votes. Too hard and crunchy. Tasteless. My vote: Homemade, from scratch, no contest. I would take the extra step and brown the butter if making from scratch, for an ultra rich, nutty, caramely flavor. Refrigerated cookie dough, which is a great alternative to homemade in a pinch, tasted pretty good, not great, but is the cheapest, is super easy and has practically no cleanup... but if you ave got the time, nothing beats the taste and appearance of the homemade version. Cookie Dough Cups
1/2 cup (1 stick) unsalted butter, softened
2/3 cup packed dark brown sugar
2 teaspoons vanilla extract
1/4 teaspoon salt
1 (14 oz.) can sweetened condensed milk
2 cups all purpose flour, heat treated
1 cup mini chocolate chips (about half a 12 oz. bag)
12 oz. pink candy melts or white chocolate and pink food coloring, per 1 dozen cups
1/4 cup semisweet chocolate chips, per 1 dozen cups
Place flour in a microwave-safe bowl and microwave on high, in 30 second intervals, mixing after each interval, until flour reaches 160 degrees F, about 1 1/2 minutes.
In a mixing bowl, beat together the butter and brown sugar on medium speed, until light and fluffy, about 3 minutes. Beat in vanilla, salt and sweetened condensed milk. On low speed, beat in flour until combined. Fold in chocolate chips. Scoop rounded teaspoons of dough and roll into little balls. Flatten slightly with your fingers.
Melt candy melts in microwave in 30 second intervals, stirring after each interval, until smooth. Transfer to a plastic sandwich bag, if desired, for easy piping.
Line mini cupcake pan (or regular size for bigger cups) with cupcake wrappers. Add one teaspoon of melted candy to cover the bottom of the cupcake wrapper. Gently press in cookie dough ball, making sure not to press all the way to the bottom. Add enough melted candy to cover the sides and top of cookie dough. Tap against counter to release any air bubbles and to smooth. Repeat with remaining cookie dough. Chill in freezer for about 5-10 minutes to set and harden.
Melt semisweet chocolate. Add a layer on top of hardened pink chocolate cups, about 1 teaspoon. Tap against counter to release any air bubbles and to smooth tops. Add sprinkles if desired. Repeat with remaining cups.
Set in freezer for about 5 minutes. Store at room temperature until ready to serve.
