Rest it for 15 -20 mins. Now make balls out of the dough ,roll it thin, make small puris and fry them on medium flame until they turn golden. Ingredients for pani: Mint leaves..one bunch Coriander leaves..one bunch Green chilli..4-5 Tamarind paste thick..3 tb sp Black salt..2 tsp Amchur powder.. 2tsp Chat masala 2 tsp Salt Lemon juice 1 tab sp Water..1 ltr Method: Grind mint,coriander and chilli together. To this paste add all the remaining ingredients one by one. Ingredients for potato stuffing : Potato boiled ..3 Boiled peas...1 cup Chopped onion..1/2 cup Chat masala 1 tsp Red chilli powder..1/2 tsp Salt Method: In a bowl take boiled potato and mash well.add in cooked peas and all the other ingredients and mix once. To serve, take a puri press it gently on top to make a hole, stuff in the potato mix, add some onion,dip in pani and enjoy. you can add green and tamarind chutney if needed. green chutney : ingredients: mint 1/2 bunch coriander 1/2 bunch green chilli 3-4 lemon juice 1 tb sp chat masala 1 tsp cumin powder 1/2 tsp sugar a pinch salt as needed Method : grind everything together using a little water. Sweet chutney: Ingredients : Thick tamarind juice 1 cup Jaggery powder 1/2 cup Water 1/2 cup Red chili powder 2 tsp Cumin powder 1 tsp Fennel powder 1/4 th tsp Salt as needed. Method: In a vessel take tamarind juice,water and boil it until it reduces to half quantity. Now add jaggery powder and remaining ingredients. It thickens up and reaches chutney consistency. Switch off the flame and cool down. You can store this in glass container and refrigerate for long. Note: while boiling tamarind you can also add 1/4 th cup of cooked and ground dates. It enhances chutney taste.
