Ingredients: • 1 bunch of Coriander leaves • 1 cup Besan / Chick pea flour • 1/4 cup Rice flour • 1 tbsp Green chili-Gralic paste • 1/2 tsp Red chili powder • 1/4 tsp Turmeric powder • 1/2 tsp Cumin seeds • 1 tsp White Sesame seeds • Salt to taste • 4 tbsp Water • 1/2 tsp Oil • Oil for frying Method: • Take a bunch of coriander and clean it properly. • Remove any yellow or rotten leaves. Separate the stalks and leaves. • Wash the coriander with water really good to remove any dirt or soil present in it is removed. • Spread the coriander on a towel or clean cloth and let it dry completely. • Add besan, rice flour, green chili-garlic paste, red chili powder, turmeric powder, cumin seeds, sesame seeds and salt. • Mix everything well together without adding any water. • Add a very little water and make thick dough. • Apply a little oil and make the dough even. • Make rolls from the dough. You can make 3 rolls from 1 bunch coriander. • Take steamer and heat up about 1” water in it. • Take steamer pot and grease it really good with oil. • Put the kothimbir vadi rolls in it. Keep some space between two rolls as they puff up after steaming. • You can use cooker instead of steamer. • Heat up 1” water in the cooker. Put a pot and a dish on it. • You can steam kothimbir vadi in cooker too. • Steam the vadi on medium heat for about 15-20 minutes. • After steaming, take the vadi out and let it cool down. • Cut the rolls into pieces. • Heat up oil and drop vadi into it. Fry the vadi unril light golden from both sides and take them out. • You can shallow fry the vadi or can have the steamed vadi too. Tips: • The coriander should be dry. If any water is left in coriander more besan will be absorbed in it and the vadya won’t be crispy. So make sure to dry the coriander completely. • Rice flour absorbs excess moisture quickly and helps in making the vadi crispy. • If you add more water, more besan will be required and vadi will not be crispy. Ingredients: .2 cup chopped onion .2 cup wheat flour .1 cup jowar flour .1 cup rice flour .1 cup chick pea flour .2 tbsp garlic paste .1 tbsp carom seeds(ajwain) .1 tbsp crushed cumin seeds(jeera) .1 tbsp crushed fennel seeds(sauf) .5 tbsp sesame seeds .1&1/2 tbsp red chilly powder .1 tsp turmeric powder .salt .1/2 cup chopped coriander leaves . oil . water Method: . Take big bowl and add chopped onion ,coriander leaves,garlic paste,carom seed crushed fennel seeds,crushed cumin seeds,sesame seeds,red chilly powder ,turmeric and salt in it. . Also add 5-6 tbsp oil in it,and mix it well. . Then add all flours one by one and again mix it well. . Knead very soft and smooth dough by adding enough water and keep it aside for 10 minutes . . To spread thalipeeths ,dough should be very smoother. . Heat tawa on low flame. . Take cotton cloth and wet it with water,remove excess water from cloth. . Spread cotton cloth on rolling board. . Wet palm and take some dough in it and roll it. . Place dough on wet cloth and again wet palm,spread thalipeeth evenly on cloth. . Make a hole at the center of thalipeeth to add oil . . Spread little oil on hot tawa. . Lift the cloth and place the thalipeeth side on tawa,and remove cloth carefully. . cover thalipeeth with lid for 1 minute.keep flame low. . After that add little oil on it and roast thalipeeth from both sides. . Keep turning and roast till brown spots appers on it. . Thalipeeth is ready serve it with pickle,butter,curd,thecha. Ingredients: • 2 cups Wheat flour • 1 1/2 cups Methi / Fenugreek leaves • A pinch of Ajwain / Carom seeds • A pinch of Cumin seeds • 1 tsp Coriander powder • 1 tsp Red chili powder • 1/4 tsp Turmeric powder • 1 tsp Garlic-Green chili paste • 1 tbsp White sesame seeds • Salt to taste • 1 tbsp Besan • Oil Method: • In a bowl take wheat flour. • Add besan, red chili powder, coriander powder, ajwain, cumin seeds, turmeric powder, sesame seeds, garlic-green chili paste, salt and mix everything well together. • Pluck methi leaves and wash them really good. • Dry the methi leaves a little and chop them finely. • Add chopped methi leaves and mix well. • Add very little water so that methi leaves will release the moisture. • Mix methi leaves well with flour. • Add a little water at a time and knead a little thick dough. • When the dough is almost ready add about half tsp oil and knead it well again. • Spread very little oil on the dough so that it won’t get dry. • Cover and rest the dough for about 15-20 minutes. • Heat up a pan on medium heat. • Take the dough and knead it once more. • Make small balls of dough. • Take one ball and dip it in the dry flour once. • Roll the paratha well. It should be a little thick and not thin. • Transfer the paratha on hot skillet. • When small pops or bubbles begin to appear on the upper side of the paratha flip it over. • After roasting the other side for about a minute, spread ghee or oil on the paratha. • Flip the paratha and spread ghee on other side as well. • When the paratha is roasted well from both sides take it off into a dish. • Methi paratha is already. • This can be a good option for kids’ tiffin or breakfast or office tiffin too. • As methi paratha remain good for 2-3 days these can be a good travelling option too. This is Kolhapur special recipe. Fried potato vada is served with hot and spicy curry or gravy known as kat or tarri. This combination tastes just awesome with slice bread or as it is. You can try this recipe at home in this monsoon and drop a comment for me. Do not forget to like, share and comment. Ingredients: For Kat • 4 tbsp + 1 tsp Oil • 4 medium size sliced Onions • 4~5 Garlic cloves • 1” piece of Ginger • 1/4 cup shredded dry Coconut • 1 tbsp Kanda lasun masala • 1 tbsp Red chili powder • Salt to taste • Finely chopped Coriander leaves For Batata Vada Stuffing • 4 boiled & peeled Potatoes • 1 tbsp Garlic-Green chili paste (4-5 green & 7~8 garlic cloves roughly blended) • 1/4 tsp Hing • 7~8 Curry leaves • 1/4 tsp Turmeric powder • Finely chopped Coriander leaves • Salt to taste For Batata Vada Batter • 8 tbsp Besan / Chick pea flour • 1 tbsp Rice flour • A pinch of Baking soda • Salt to taste • 1/4 tsp Turmeric powder Method: For Kat • Heat up 1 tsp oil in a pan. • Add onion, garlic, ginger and mix well. • Fry onion until it gets nice light golden color. • When onion begins to turn light golden add dry coconut and mix well. • Fry for about another 3-4 minutes. • Turn off the gas and let the masala cool down a little. • Transfer the masala into a blender jar. • Add coriander leaves and blend it in mixer. Use minimum water while blending. • Heat up oil in a pan. • Add blended masala and mix well. • Fry the masala well for about 3-4 minutes. • Add kanda lasun masala, red chili powder and mix well. • Fry the masala well for another 2-3 minutes. • Add hot water, salt to taste and mix well. • Boil the kat well on medium heat for about 7-8 minutes. Kat is already. For Batata Vada Stuffing • Heat up oil in a pan. • Add hing and garlic-green chili paste. • Lower down the heat to lowest. • Mix well and add curry leaves. • Fry for about a minute on low heat. • Turn off the gas and add turmeric powder. • Mix well and add boiled & peeled potatoes. • Break the potatoes down with a masher. • Do not mash them completely. Some pieces of potato should be left behind. • Add salt to taste, coriander leaves and mix well. • You can add lemon juice if you want. • Stuffing is already. Remove the curry leaves if you want. • Make a little big vade from this. You can make 8 vade from this stuffing. For Batata Vada Batter • Take besan into a bowl. • Add rice flour, turmeric powder, salt to taste, a pinch of baking soda. • Mix well and add a little water at a time to make batter. • No lumps of besan should be formed. • The consistency of the batter should neither too thick and not too thin. It should be a little thick. For Kat vada • Heat up oil in a pan. • Dip the vade in the batter and drop them in hot oil. • After frying for about 3-4 minutes flip the vada over and fry from other side as well. • When vada is fried well from both sides take it out on a tissue paper. • Batata vada is already. • Serve some hot kat into a serving dish. • Add vada in it. Garnish with finely chopped onion, coriander leaves and fine shev. • Serve kat vada with slice bread. • You can have vada with kat and bread or only with kat too. Puris are spices up al little and they taste awesome. Tikhat puri is also known as masala puri. These have got good shelf life so can be good travelling food too. This is very simple and easy recipe. Let’s learn to make tikhat puri. Ingredients: • 2 cups Wheat flour • 1 tsp Besan / Chick pea flour • 1 tbsp Red chilli powder • 1 tbsp Coriander powder • Cumin seeds-ajwain powder (1/2 tsp Cumin seeds and 1/2 tsp ajwain blended coarse) • 1 tsp Sesame seeds • 1/2 tsp Turmeric powder • Salt to taste • 3/4 cup Water • Oil for frying Method: • In a dish, take wheat flour. • Add besan, red chilli powder, coriander powder, Cumin seeds and ajwain powder, sesame seeds, turmeric powder and salt. • Mix the dry spices well with flour. • Add a little water at a time and knead thick dough of it. Don’t add much water at a time. • Grease the dough with little oil and transfer the dough into a bowl. • Cover and give it a standing time of 30-45 minutes. • After about an hour take the dough out and knead once more. • Take some dough and roll medium thick chapatti. Chapati should neither be too thick or too thin. • You can make small balls and roll the puris too. • Until you roll the puris, heat up oil in a pan for frying. • After rolling out the chapatti, make puris with the help of a lid. • When puris are ready transfer them into a dish. • When oil is enough hot, lower the heat to low. • Drop one puri into hot oil. After dropping, press it a little with ladle. • When fried well from one side, flip over and fry from another side as well. • Remove the puri from hot oil, drain excess oil and put it on a tissue paper. • You can make 24-25 medium size puris from 2 cups wheat flour. • Tikhat puri goes well with tea. • It has got shelf life of about 7-8 days. So this can be a good travelling food. Masala paratha is a very easy and simple recipe. This can be made from the ingredients easily available in your pantry. If the dough is ready then this can be a quick breakfast option. Plain paratha is spiced up with some spices and served. Do try this recipe at home and drop a comment for me. Do not forget to like, share and comment.

Ingredients:
• 2 cups Wheat flout
• Salt to taste
• Oil
• Kanda lasun masala
• Red chili powder
• Finely chopped Coriander leaves

Method:
• Take wheat flour into a dish and add salt to taste.
• Mix well and add a little water at a time and knead dough as we
knead chapatti dough.
• Add a little oil and knead again.
• Transfer the dough into a bowl, and spread a little oil all over it.
• Cover and rest the dough for about 15-20 minutes.
• Take the dough and knead it once more to make it even.
• Take a little dough ball and make it even.
• Dip the dough ball into dry flour and roll a little thick chapatti.
• Spread oil all over the chapatti.
• Spread kanda lasun masala, red chili powder, a little salt and
coriander leaves.
• Add salt just enough to balance the taste of the spices.
• You can use kala masala, malvani masala, varhadi masala, saoji
masala or any stored masals that you have instead of kanda
lasun masala.
• Roll the coriander leaves a little with rolling pin so that these
won’t fall off.
• Fold the paratha as we fold the paper for making fan.
• Fold the side having masala inside to make a ball.
• Roll the ball into a little thick paratha again.
• Heat up a pan on medium heat.
• Transfer the rolled paratha on the pan.
• After roasting for about 3-4 minutes from one side flip the
paratha over and roast form other side for about 2-3 minutes.
• Spread a little more oil and flip it over.
• Spread oil from other side as well.
• Roast the paratha well from both sides.
• Take the paratha off the pan into a dish and crush it a little from
all sides so that it will get nice layers.
• Masala paratha is already.
• You can have this paratha as it is.
