Chicken and Qeema Pakora Recipes by Food Fusion

Chicken Pakora Recipe in English: Ingredients: -Baisan (Gram flour) 1 Cup -Baking soda ¼ tsp -Haldee powder (Turmeric powder) ¼ tsp -Lal mirch powder (Red chili powder) 1 tsp -Chaat masala ½ tsp -Dhania (Coriander seeds) crushed 1 tsp -Namak (Salt) 1 tsp or to taste -Lal mirch (Red chili) crushed 1 tsp or to taste -Zeera (cumin seeds) roasted & crushed ½ tsp -Hara dhania (Fresh coriander) chopped 2 tbs -Pyaz (Onion) chopped 2 tbs -Pani (Water) ½ Cup or as required -Chicken boneless cubes 250 gms -Cooking oil for frying Directions: -In a bowl,add gram flour,baking soda,turmeric powder,red chili powder,chaat masala,coriander seeds, salt,red chili crushed,cumin seeds,fresh coriander,onion and mix well. -Gradually add water to form batter and let it rest for 10 minutes. -Take chicken boneless cubes and dip into batter. -In a wok,heat cooking oil and fry on low flame until golden brown. Qeema Pakora Recipe in English: Ingredients: -Beef qeema (Beef mince) 200 gm -Lal mirch (Red chili) crushed 1 tsp -Dhania (Coriander seeds) crushed 1 tsp -Lal mirch powder (Red chili powder) 1 tsp -Haldee powder (Turmeric powder) ¼ tsp -Namak (Salt) 1 tsp or to taste -Ajwain (Carom seeds) ½ tsp -Adrak paste (Ginger paste) 1 tsp -Hari mirch (Green chilies) chopped 2 -Hara dhania (Fresh coriander) chopped 2 tbs -Pyaz (Onion) chopped 2 tbs -Anda (Egg) 1 -Baisan (Gram flour) ¾ Cup -Pani (Water) 2-3 tbs or as required -Cooking oil for frying Directions: -In a bowl,add beef mince,red chili crushed,coriander seeds,red chili powder,turmeric powder,salt, carom seeds,ginger paste,green chilies,fresh coriander and mix well. -Add onion,egg,gram flour and mix well. -Add water and mix well. -In a wok,heat cooking oil and fry on low flame until golden brown. The most popuar Indian starter. Chicken pieces marinated in yogurt along with spices and cooked till tender. TANDOORI CHICKEN Ingredients 750 grams whole chicken, cut into 4 pieces on the bone 2½ tablespoons lemon juice ½ teaspoon turmeric powder Salt to taste 3½ tablespoons Kashmiri red chilli paste 1½ tablespoons ginger-garlic paste ¾ cup hung yogurt ½ teaspoon garam masala powder ¼ teaspoon carom seeds (ajwain) ½ teaspoon chaat masala + for sprinkling 1½ tablespoons gram flour (besan) 1 teaspoon red chilli flakes Oil for greasing 2 medium onions ½ medium tomato ¼ medium cucumber ½ lemon A fresh mint sprig for garnishing Melted butter for brushing Method 1. Make incisions on both sides of chicken pieces and place on a plate. Add 2 tablespoons lemon juice, salt and rub well from all sides. 2. Add turmeric powder, 2 tablespoons Kashmiri red chilli paste and 1 tablespoon ginger-garlic paste and rub well again. Refrigerate to marinate for 20-25 minutes. 3. To prepare 2nd marinade, combine hung yogurt, remaining Kashmiri red chilli paste, remaining ginger-garlic paste, lemon juice, garam masala powder, carom seeds, ½ teaspoon chaat masala and gram flour in a bowl and whisk. Add salt and whisk. Add chilli flake and whisk well. 4. Put the marinated chicken pieces in another bowl, add the 2nd marinade and rub well. Set aside to marinate for 1 hour. 5. Preheat oven to 200° C. 6. Grease a baking tray with some oil, place the marinated chicken pieces and apply the marinade. 7. Put the tray into the preheated oven and bake for 30 minutes. 8. Peel the onions and cut into thin roundels. Cut the sides of tomato and further cut into a fan. 9. Diagonally cut the cucumber and further cut into a fan. 10. Halve a lemon and peel some skin using a knife and tie a knot to make a tail. Place a mint sprig on top. 11. Brush some melted butter on top. 12. Place onion roundels, tomato fans, lemon slice and cucumber fan on one side of a serving platter and tandoori chicken on another side. Sprinkle some chaat masala on top and serve hot. Make it like we do and you will love it. #HappyCookingToYou Recipe in English: Ingredients: Prepare Kadhi: -Baisan (Gram flour) 1 Cup -Dahi (Yogurt) sour ½ kg -Pani (Water) 1 & ½ Cups -Oil 3 tbs -Curry pata (Curry leaves) 10-12 -Zeera (Cumin seeds) ½ tsp -Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs -Haldee powder (Turmeric powder) 2 tsp -Lal mirch powder (Red chili powder) 1 tbs -Namak (Salt) ½ tbs or to taste -Pani (Water) ¼ Cup -Pani (Water) 3 Cups Prepare Pakoray: -Baisan (Gram flour) 2 Cups -Namak (Salt) 1 tsp or to taste -Baking soda ¼ tsp -Pani (Water) 1 Cup or as required -Dhania (Coriander seeds) crushed 1 tbs -Lal mirch powder (Red chili powder) 1 tsp -Hari mirch (Green chilies) chopped 2 -Pyaz (Onion) sliced 1 medium -Hara dhania (Fresh coriander) chopped ¼ Cup Tadka: -Oil ¼ Cup -Pyaz (Onion) sliced 1 small -Lehsan (Garlic) 3 cloves -Sabut lal mirch (Whole red chilies) 4-5 -Zeera (Cumin seeds) 1 tsp -Curry pata (Curry leaves) 8-10 Directions: Prepare Kadhi: -In frying pan,add gram flour and roast until fragrant & let it cool. -In bowl,add roasted gram flour,yogurt and mix well. -Gradually add water and mix well until smooth and set aside. -In pot,add oil,curry leaves,cumin seeds,ginger garlic paste and mix well. -Add turmeric powder,red chili powder,salt and mix well. -Add water and mix well for 2 minutes. -Add gram flour yogurt mixture and mix well. -Add water,mix well and bring it to boil,cover and cook on low flame (approx. 2 & ½ hours) and keep stirring in between. Prepare Pakoray: -In pot,add gram flour,salt,baking soda and mix well. -Gradually add water and mix well to form a smooth batter. -Add coriander seeds,red chili powder,green chilies,onion,fresh coriander and mix well. -In wok,heat oil and fry pakoray until crispy and golden. -Now add fried pakoray in kadhi,stir gently and cook for 1-2 minutes. For Tadka: -In frying pan,add oil,onion and fry until translucent. -Add garlic and fry. -Add whole red chilies and mix,add cumin seeds,curry leaves and mix well. -Now add tadka on kadhi and serve with rice. Prepare Pakoray: -Pot mein baisan,namak aur baking soda dal ker ache tarhan mix ker lein. -Thora thora ker ka pani shamil karein aur ache tarhan mix ker ka smooth batter tayyar ker lein. -Dhania,lal mirch powder,hari mirchein,pyaz aur hara dhania dal ker ache tarhan mix ker lein. -Karhai mein oil garam karein,crispy aur golden hunay tak pakoray fry ker lein. -Add fried pakoray ko kadhi mein dal dein,mix karein aur 1-2 minutes kliya paka lein. For Tadka: -Frying pan mein oil aur pyaz dal ker translucent hunay tak fry ker lein. -Lehsan dal ker fry karein. -Sabut lal mirch dal ker mix karein,zeera aur curry pata dal ker ache tarhan mix ker lein. -Ab tadka ko kadhi ka upper dal dein aur chawal ka saath serve karein.
