Imo Mochi (Potato Rice Cakes) are one of the very popular Traditional Hokkaido snacks. The texture is chewy like Mochi, coated with addictive sweet soy glaze! I wrapped with Nori seaweed sheet, just like Isobeyaki 💕 Mouthwatering! Must try😋 Only 7 Ingredients 👍 Most ingredients are only 2 tbsp. Easy to remember 😉 Perfect for Vegan, Vegetarian people as well 💖 --------------------------------- Hokkaido Potato Mochi (Chewy Traditional Japanese Snack Recipe) Difficulty: Easy Time: 30 min Number of servings: 8 pieces Ingredients: 220g (8oz.) potatoes 2 tbsp. Katakuriko (potato starch) or corn starch Sauce * 2 tbsp. sugar * 2 tbsp. soy sauce * 2 tbsp. Mirin (sweet Sake) 2 tbsp. cooking oil 1/2 Nori sheet Directions: 1. Mix the sauce. Cut Nori sheet into 8 strips. 2. Wash and clean the potatoes. With the skins, place it on a microwavable dish, cover with plastic wrap, then microwave at 600w for 5 minutes until you can insert a fork or a bamboo stick. Remove the skins then mash. 3. Add Katakuriko (potato starch) then knead by hand. 4. Divide it into 8, then roll into flat circles. If they crack, moist your hand with water then roll again. 5. Heat cooking oil (about 2 tbsp.) in a frying pan, cook both sides of potato Mochi until crisp golden brown. 6. Remove the excess oil with a paper towel. Stop the heat, then add the sauce and cook with the remaining heat until the sauce thickens. You can heat more if the sauce is still not thick. 7. Nicely coat the potato Mochi with sauce, then wrap in Nori. Yummy if you add some cheese in the center. Best eaten on the day you make but yes, you can keep in the fridge then microwave. You can also freeze them at step 3. Wrap individual potato Mochi in plastic wrap. You can drink it with cold water or soda in summer, or with hot water in winter! It prevents colds and helps recover from fatigue. Believe it or not, it is not that sour. You can eat the lemon slices, too!!! --------------------------------- Honey Lemon Slices Difficulty: Super Easy Time: 10min Number of Servings: 500ml glass jar Necessary Equipment: glass jar Ingredients: 2 organic lemons 300g (10.6oz) honey Directions: 1. Pour some hot water in a glass jar to disinfect it. Empty the jar and dry it out. It will dry quickly with residual heat. 2. Wash the lemons, dry them with paper towels, slice them thin, and remove the seeds (discard the end pieces). 3. Put the lemon slices and honey alternately in the jar. 4. Keep it in the fridge for 3 days. Shake the jar once a day. 5. Remove the lemon slices after 3 days or the syrup gets bitter! You can eat the lemon slices as is. Also, you can freeze the lemon slices and use them like ice cubes. *Please use the syrup within a week before it gets bad. *The syrup goes great with yogurt! Matcha green tea powder 2 tsp. Matcha green tea powder for coating Directions: 1. Put whipping cream in a small sauce pan. Heat until hot before it starts to boil. 2. Sift in Matcha powder and mix well with a spatula. *do not use a whisk or the matcha crumbles 3. Add chopped white chocolate, leave until they start to melt, then quickly mix well. *do not overmix or the chocolate starts to seize (split). 4. Line the box with a parchment paper (or plastic wrap) and pour in the chocolate mixture. Smooth out the surface and put in the fridge until firm (over 1 hour). 5. The Best Japanese Potato Salad (Recipe) | OCHIKERON | Create Eat Happy :)

This is a typical & basic Japanese potato salad. Neatly preparing each ingredient is the key to make delicious potato salad. Take time and enjoy!!! --------------------------------- Japanese Potato Salad Difficulty: Easy Time: 30min Number of servings: 4 Ingredients: 300g (10.6oz.) potato 50g (1.8oz.) carrot 50g (1.8oz.) onion 50g (1.8oz.) cucumber 2 cooked sliced ham 1/2 cup whole kernel corn (canned) 1/2 tbsp. vinegar (rice or cereal) 4 tbsp. mayonnaise salt and pepper Directions: 1. Slice the onion, sprinkle with a bit of salt, then leave for 2~3 minutes until tender. Wash and drain well with paper towel. *in this way you can remove the bitter taste and unwanted smell of the onion. 2. Slice the cucumber into thin rounds (you can use a vegetable slicer if you have). Sprinkle with a bit of salt. When they become tender, drain well with paper towel. *removing extra water from cucumber will help not make the salad soggy. 3. Cut sliced ham into 1/2inch (1cm) square pieces. 4. Slice the potato into 1/2inch (1cm) half rounds. Place them in a pot, lightly wash (to remove extra starch), add water until covered, add 1/2 tsp. salt, then put on the heat. When it becomes to a boil, turn down to medium and cook for about 12 minutes. Check with a skewer, when they are done, drain well, transfer into a bowl and mash them with a fork while they are hot. Season with 1/2 tbsp. vinegar, salt and pepper. *these seasonings will make the potato tasty. 5. Slice the carrot into 0.1inch (3mm) quarter rounds. Cook in a boiling water for 3 minutes, then drain well. 6. Classic Japanese Lemon Pop Candy (Ramune Recipe)

Difficulty: Very Easy
Time: 15 min + drying time
Number of servings: 18 pieces (0.7inch candies)

Ingredients:
60g (6 tbsp.) powdered sugar (confectioner's sugar)
25g (4 tbsp.) corn starch
1/2 tsp. baking soda
1 tsp. citric acid
1 tsp. lemon juice
1/2 tsp ~ 1 tsp. Water

Directions:
1. Mix citric acid and lemon juice in a bowl, until somewhat blended is ok.
2. Add powdered sugar, corn starch, and baking soda in order. (You do not want to let the baking soda touch the liquid or it becomes fizzy.)
3. Mix very well with your hand. If you think you need more water, add little by little. A drop at a time or a 1/2 tsp. at a time. Clasp and unclasp your hand to check if it becomes one but crumbles (Not too moist. If you add too much water, it becomes fizzy and plumps up. See the video).
4. Push into a mold to shape.
5. Dry them out completely for a day.
