I'm not saying, I don't enjoy the days that I'm not eating chocolate cake. But I do particularly like those days when I am eating chocolate cake ;) CHOCOLATE CAKE INGREDIENTS:- Powdered Sugar 2 cups All-purpose flour 1-3/4 cups Cocoa powder 3/4 cup baking powder 1-1/2 teaspoons baking soda 1-1/2 teaspoons salt 1 teaspoon eggs 2 milk 1 cup vegetable oil 1/2 cup vanilla extract 2 teaspoons boiling strong coffee 1 cup ingredients for the Ganache Dark Chocolate 600g Nutella 300g Heavy whipping Cream 700g Vanilla extract 2 teaspoons Method:-Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; With electric mixer beat on medium speed for 2 minutes. Stir in boiling coffee (batter will be thin). Pour batter into prepared pan. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans . Cool completely. Frost with DARK CHOCOLATE GANACHE. I make cakes QUITE often so you can imagine I like things to go smoothly especially since I’m usually filming and sharing the results. When I first started out my cakes had a very “home made” look about them, the corners were rounded and they often sagged at the edge or even drifted off to one side. The taste was good but appearances matter so I would have to trim the top off of my domed layers to get a flat top but then you end up with extra cake and lots of crumbs! Eventually I realized the problem wasn’t with the recipe but the bake itself. When you bake cake layers the outside heats up and baked more quickly than the center, which is insulated by the rest of the batter surrounding it. So basically the outside of the cake layer bakes first; the inside of the cake layer has more time to rise and by the time the inside is set and baked through the outside is starting to dry out and burn. Take a pressure cooker, add 1 litre water, 650 grams potatoes and cover it with lid. 2. Cook till you hear 2 - 3 whistles. 3. Remove it from heat and peel the potatoes. 4. Transfer it to a bowl and mash the potatoes with the help of a food masher. 5. Heat 20 milliliters oil in a skillet, add 1/2 teaspoon cumin, 1 teaspoon ginger, 1/2 teaspoon green chili, 1/4 teaspoon asafoetida and saute for 1 - 2 minutes. 6. Then, add 250 grams tomato puree and mix it well. 7. Cook for 7 - 10 minutes on medium heat. 8. Add 1/2 teaspoon turmeric and stir well. 9. Add 1/2 teaspoon cumin powder, 1/2 teaspoon red chili, 1/2 teaspoon dry mango powder, 1 teaspoon salt, 1/2 teaspoon coriander powder and mix it well. 10. Now, add boiled mashed potatoes and mix it well. 11. Add 450 milliliters water and stir well. 12. Bring it to a boil. 13. Cook for medium heat for 10 - 12 minutes. 14. Add 1/2 teaspoon garam masala, 1/2 teaspoon dry fenugreek and mix it well. 15. Cook for another 3 - 5 minutes. 16. Remove it from heat and keep aside. (For Kachori) 1. In a bowl, add 100 grams split mung beans, 250 milliliters water and soak for 30 minutes. 2. Transfer this into a blender and blend it into a paste. Keep aside. 3. In a mixing bowl, add 300 grams all purpose flour, 1 teaspoon salt, 60 milliliters ghee, 120 milliliters water and knead it into a smooth soft dough. 4. Rest the dough for 20 minutes. 5. Heat 15 milliliters oil in a pan, add 1 teaspoon cumin, 1 teaspoon fennel seeds, 2 teaspoons coriander seeds, 1/4 teaspoon asafoetida and roast for 2 -3 minutes. 6. Add 1 teaspoon green chili, 1 teaspoon ginger and stir well. 7. Then, add 1 teaspoon salt, 1 teaspoon red chili, 1 teaspoon garam masala and mix it well. 8. Add 45 grams gram flour and mix it well. 9. Cook for 5 - 7 minutes on medium heat or until it turns dark brown in color. 10. Now, add the blended paste in it and mix it well. 11. Cook for another 5 - 7 minutes on medium heat. 12. Add 1 teaspoon dry mango powder and mix it well. 13. Remove it from heat and keep aside. 14. Take a ball from dough and flatten it with the help of a rolling pin. 15. Add some prepared mixture on it. 16. Roll it into a ball and slightly flatten the ball with the help of your palms to make a kachori. (See Video) 17. Heat sufficient oil in a heavy skillet and deep fry these until it turns golden brown and crispy. 18. Drain it on an absorbent paper. 19. Garnish with coriander. 20. Serve hot with prepared aloo sabzi.

All purpose flour - 300 grams
Baking powder - 1/2 teaspoon
Baking soda - 1 teaspoon
Butter - 120 grams
Powdered sugar - 200 grams
Eggs - 3
Vanilla essence - 1 teaspoon
Butter milk - 100 milliliters
White chocolate - 120 grams
Milk - 100 milliliters
White chocolate - 150 grams
All purpose flour - 30 grams
Butter - 100 grams
Powdered sugar - 100 grams
Vanilla essence - 1 teaspoon
Sprinkle sugar crystal

1. In a mixing bowl, add 300 grams all purpose flour, 1/2 teaspoon baking powder, 1 teaspoon baking soda and mix it well.
2. In a another mixing bowl, add 120 grams butter, 200 grams powdered sugar and whist it well.
3. Now, add 3 eggs one by one and whisk it well.
4. Add 1 teaspoon vanilla essence and mix it well.
5. Then, add the all purpose flour and whisk it well to make a thick batter.
6. Add 100 milliliters butter milk, 120 grams white chocolate and whisk it again.
7. Now, pour the batter into the baking dish.
8. Preheat the oven to 345°F/175°C. Bake for 45 minutes or until the top is golden brown.
9. Take a pan, add 100 milliliters milk, 150 grams white chocolate and stir well.
10. Bring it to a boil.
11. Add 30 grams all purpose flour and mix it well.
12. Remove it from heat and keep aside.
13. In a mixing bowl, add 100 grams butter, 100 grams powdered sugar, 1 teaspoon vanilla essence and whisk it well.
14. Now, add the chocolate milk mixture in it and mix it well.
15. Spread the prepared frosting over the cake and spread it evenly.
16. Sprinkle sparkling sugar crystal over it.
17. Refrigerate for 1 hour.
18. Cut it into pieces.
19. Serve and enjoy!
