Deviled Eggs 3 Ways

There's more than one way to devil an egg 😉. Check out these three creative deviled egg recipes to impress everyone at your next picnic or potluck. For the Perfect Hard Boiled Eggs: In a medium saucepan, cover eggs with 1 inch of water. Bring to a boil; remove from heat. Cover and let stand 12 minutes. Drain eggs; run under cold water until cool enough to handle. Miso-Sriracha Deviled Eggs Ingredients: -- 8 large eggs -- 1/3 cup mayonnaise -- 1 Tbsp Dijon mustard -- 1 tsp white-wine vinegar -- 1 tsp low-sodium soy sauce -- 4 tsp miso paste -- 1 tsp sriracha -- Black sesame seeds Directions: - Peel and halve eggs lengthwise; remove yolks and transfer to a bowl. Mash with a fork; mix in mayonnaise, mustard, and vinegar. Press through a sieve to make smooth. Stir soy sauce, miso paste, and sriracha into yolk mixture. Press through the sieve again. - Using a pastry bag fitted with the desired tip (we used plain and star tips), pipe yolk mixture into whites. Garnish with black sesame seeds. Serve immediately, or chill up to 2 hours. Curried Deviled Eggs Ingredients: -- 1 tablespoon, plus 1/4 to 1/2 teaspoon kosher salt, divided -- 6 large eggs -- 1/3 cup non-fat plain Greek yogurt -- 2 teaspoons Dijon mustard -- 1 teaspoon white vinegar -- 3/4 teaspoon curry powder -- 1/4 teaspoon ground yellow mustard -- 1/8 teaspoon cayenne pepper, plus additional to taste -- Ground paprika, for garnish -- Finely chopped fresh chives, and Mango Chutney for garnish Directions: -- Fill a saucepan with enough water to cover the eggs by 1 inch. Add the salt and bring to a gentle boil. Once the water is boiling, gently lower in the eggs, being careful not to break them. Reduce heat to a gentle boil and cook the eggs 14 minutes. A few minutes before the eggs are finished cooking, fill a large bowl with ice water. With a slotted spoon, carefully remove the eggs from the boiling water and submerge them immediately into the ice water. Let cool completely, about 15 minutes, then peel under cool running water. -- In a medium bowl, stir together the Greek yogurt, Dijon mustard, vinegar, curry, yellow mustard, cayenne, and 1/4 teaspoon salt. Cut the eggs in half from tip to tip. With a small spoon, gently scoop out the yolks and add them to the bowl with the curry mixture (for a very smooth filling, press the egg yolks through a sieve and into the bowl). Set the egg whites aside. Mash the yolks into the filling with the back of a fork until smooth. Taste and season with additional salt and cayenne as desired. -- Scoop or pipe the curry mixture into the hollow egg whites (I place the mixture in a ziptop bag, then snip off the corner to pipe). Refrigerate until ready to serve. Just before serving, add a dollop of mango chutney and sprinkle with paprika and chives. Dirty Martini Deviled Eggs Ingredients: -- 12 hardboiled eggs -- 24 blue cheese-stuffed olives, 12 left whole and 12 finely chopped -- 1 tablespoon olive brine from the jar -- Salt and white pepper -- 1/2 shot vodka -- A few dashes Worcestershire -- 1 teaspoon Tabasco -- 2 to 3 tablespoons mayonnaise Directions: -- Mash yolks with finely chopped olives. Add olive brine, salt and white pepper, vodka, Worcestershire, and Tabasco, and combine with just enough mayo to bind. -- Transfer egg filling to a plastic food storage bag and trim one corner to make a pastry bag. Fill egg white halves with yolk mixture and garnish with whole blue cheese-stuffed olives on toothpicks. Chill until ready to serve. Facebook: Twitter: Online:
