Deep fried vegetable dumplings tossed in spicy manchurian sauce. VEG MANCHURIAN Ingredients 1 small cabbage, shredded 1 medium carrot, cut into juliennes Salt to taste ¼ cup cornflour + for coating ½ tbsp refined flour (maida) 2 tbsps oil + for deep-frying 2 spring onion with greens 4-5 garlic cloves, finely chopped 1 inch ginger, finely chopped ¼ cup finely chopped celery 1-2 green chillies, finely chopped 1¼ cups vegetable stock 2 tsps soy sauce 1 tsp chilli sauce Crushed black peppercorns to taste 1 tsp vinegar Method 1. Place a muslin cloth in a bowl. Add cabbage, carrot and salt and set aside for 5 minutes to get rid of excess moisture. Squeeze out excess water and transfer to another bowl. Reserve the water. 2. Add ½ tbsp cornflour and refined flour to the vegetables and mix well. 3. Divide the mixture into equal portions, shape into balls and coat with cornflour. 4. Heat sufficient oil in a kadai. Deep-fry the balls till golden brown and crisp. Drain on absorbent paper. 5. To make the sauce, heat 2 tbsps oil in a non-stick pan. 6. Roughly chop spring onion bulbs and reserve the greens. 7. Add the bulbs, garlic, ginger, celery and green chillies to the pan. Add 1 cup vegetable stock, reserved water, soy sauce, chilli sauce, salt and crushed peppercorns and bring to a boil. 8. Mix together remaining cornflour and remaining vegetable stock in a bowl to make slurry, add to the sauce, mix well and cook for a minute. 9. Remove from heat, add fried balls, vinegar, mix well and set aside for 5 minutes. 10. Garnish with diagonally sliced spring onion greens and serve hot. CHICKEN MANCHURIAN Ingredients 400 grams boneless chicken, cut into 1 inch cubes 1 egg Salt to taste 2 tablespoons chopped garlic 1 teaspoon crushed black peppercorns 4 tablespoons cornflour 2 tablespoons oil + for deep frying 2 green chillies 2 spring onions with greens 1 teaspoon chopped ginger 1 medium onion, sliced 2 cups chicken stock 2 teaspoons soy sauce 2 teaspoons green chilli sauce 1 medium green capsicum, cut into thick strips 2 teaspoons vinegar Method 1. Put chicken cubes, egg, salt, one teaspoon garlic, half teaspoon crushed black peppercorns and three tablespoons cornflour in a mixing bowl and mix well. 2. Heat sufficient oil in a kadai and deep-fry till chicken cubes are golden and crisp. 3. Slit green chillies into two. Slice the spring onion bulbs. 4. Heat oil in a non-stick wok, add remaining garlic, ginger and green chillies and sauté for thirty seconds. 5. Add spring onions and onion slices and sauté till translucent. Add chicken stock, soy sauce and green chilli sauce and mix. Let the mixture come to a boil. 6. Add capsicum and mix. Make slurry of the remaining cornflour with two tablespoons water. Add the slurry to the gravy to thicken it. 7. Chop spring onion greens. 8. Add fried chicken to the gravy and mix. Add spring onion greens and mix. 9. Switch off heat and add vinegar and mix. 10. Transfer into a serving bowl and serve hot garnished with spring onion greens.
