Directions: 1. In a food processor, process cold cubed butter, flour, ground almond, powdered sugar and pinch salt. Process until crumbs are formed. Add egg and vanilla extract, process until dough is formed. 2. Transfer the dough to a work surface, pat into a ball and flatten into a disk. Wrap in plastic and refrigerate for 1 hour. 3. Preheat oven to 180C/375F 4. Roll out the dough on a parchment paper. Refrigerate for 30 minutes and cut your number/letter/shape. From the leftovers roll again the dough, refrigerate for 30 minutes and cut another number/letter/shape. For one cake you will need two layers of biscuit. 5. Bake for 10-13 minutes or until slightly golden in the edges. Let cool completely. 6. Make the cream: in a large bowl beat mascarpone and powdered sugar. Beat until smooth. Add vanilla extract and heavy cream and beat to stiff peaks. Transfer to a piping bag. 7. Pipe the mascarpone cream over the first biscuit, then gently place the second biscuit on top. Pipe the remaining cream and decorate as you like. The strawberries soak in the Champagne over night to soak up all that sweet rosΓ©. Then we dip them in a silky pink chocolate coating and decorate with sprinkles. What do you want to see next?! Let me know in the comments! β™‘β™‘β™‘ THE RECIPE! β™‘β™‘β™‘ Chocolate Covered Champagne Strawberries Ingredients fresh strawberries 1 bottle RosΓ© or Champagne 2 cups pink candy melts or color of your choice (may also use chocolate chips or chopped chocolate) 1-2 teaspoons vegetable oil or shortening 1/2 cup white candy melts or color of your choice, for decorative drizzle gold edible stars, optional: https://amzn.to/2La5Fj7 edible gold shimmer/lustre dust, optional: https://amzn.to/2sfxcbR gold and white sprinkles, for decorating: https://amzn.to/2xskiw1 Directions Wash strawberries and pat dry. Fill a large jar or bowl with the strawberries. Pour Champagne over the strawberries until they are all covered. Cover with plastic wrap and let sit in the fridge for 24 hours. Remove strawberries and dry fully with paper towels. Make sure they are completely dry on the outside or the chocolate will seize up and ruin the smooth consistency of the chocolate. Melt chocolate according to package directions. Add vegetable shortening or oil to get a velvety smooth and thin consistency, perfect for dipping. Pour chocolate into a deep mug or cup. Hold the strawberries at the leaves and dip into melted chocolate until it is fully coated. Pull straight up and out of the chocolate. Use your free hand to tap the wrist of the hand holding the strawberry to help the excess chocolate slide off of the tip of the strawberry and back into your cup. Place dipped strawberries onto wax paper. Add sprinkles or edible pearls, or snip off a tiny tiny piece from the corner of the bag and gently squeeze on to dried dipped berries, moving your hand from side to side in a quick and steady motion. Add sprinkles if desired or run a toothpick from the top down, to create a fancy design. Let strawberries dry fully, until chocolate has set (speed up the process by placing in the fridge or freezer for a few minutes). If desired, wet a paper towel with champagne, run it around the edge of a champagne glass to get it sticky and then roll in a plate of edible gold stars, or sprinkles. Add strawberry to the rim by making a slice on the side, so it stay on securly. Enjoy same day, or refrigerate if not serving immediately. These are best served within 24 hours of dipping. This heart shaped cookie cake is an super easy spin on the cream tarts/letter cakes/number cakes that are all over Instagram and pinterest lately! I just layered my sugar cookies with frosting. Then, decorated it with more frosting, sprinkles, fresh fruit, fresh flowers and all kinds of candy!

Easy Heart Cookie Cake



Yield: one 2-layer cookie cake



Ingredients

-16oz cut-out sugar cookie dough: http://www.lindsayannbakes.com/2014/12/classic-cut-out-sugar-cookies.html
-16oz vanilla or cream cheese, frosting: http://www.lindsayannbakes.com/2011/09/frostings-fillings.html
-fresh strawberries and raspberies
-pink sweethearts, sixlets and strawberry chocolate bars: http://www.lindsayannbakes.com/2018/03/video-all-natural-strawberry-chocolate.html
-fresh flowers; stems wrapped in foil
-white and gold edible sugar pearls: https://amzn.to/2JqRzgA


Directions

Split cookie dough in half and use parchment paper cut-out to create any 2 shapes/letters/numbers of choice. Bake 350, 10-12 mins, or until light golden brown around the edges. Cut out center, if making a heart cake, using a cookie cutter while cookies are warm out of the oven. Let cool completely.

Pipe dollops around the entire surface of the first cookie. Gently place the second cookie on top, without pressing down. Pipe more dollops all over the top cookie, until the surface is covered. Add toppings. Serve immediately, or store, covered, in the fridge for up to a few days.
