Avocado with eggs 390 calories (1 serving) Ingredients 1 tbsp olive oil 2 eggs, lightly beaten 2 Tbsp. low fat milk 1/8 cup shredded Cheddar cheese 1 Tbsp. sliced green onion 1/8 cup chopped red bell pepper 1/2 ripe, Avocado, seeded peeled and cubed Black pepper and salt Preparation Heat oil in a large skillet over medium heat. Add green onion, and chopped red bell pepper and cook. Mix eggs, salt, Black pepper and milk and pour egg the mixture into skillet. Cook eggs until top is almost set. Top with avocado and shredded Cheddar cheese, fold over and serve immediately.
