This recipe is guaranteed to produce perfect results each time. The only variable in this recipe is the amount of sweetness, I prefer a moderate sweetness and I use 3/4 cup of sugar for 1 cup of semiya but if you prefer a sweeter version you can use 1 cup of sugar for 1 cup of semiya. Even if you buy the roasted semiya from the store, always roast for a couple of minutes in ghee, this will ensure that the vermicelli holds its shape and texture at the end of the recipe. If this pre-roasting step is skipped it will form a huge lumpy kesari.
