詳しいレシピはこちら→ 夏みかんピールの作り方、レシピです。夏みかんピールは、夏みかんの皮の砂糖煮、夏みかんの爽やかな苦味が楽しめる砂糖菓子です。皮が固くならないように砂糖を分けて入れて煮ます。甘夏やオレンジでも作れます。 How to make Candied Natsumikan Peel. 完成品約600g 100gが約340kcal calories:about 340kcal/100g 【材料】 夏みかん‥‥3個(オレンジや文旦でも) 砂糖‥‥茹でた後の夏みかんの皮の重さと同量~8割 グラニュー糖‥‥適量(仕上げにまぶす) 【Ingredients】 (makes about 600g) 3 natsumikan (orange or other citrus) white sugar 80-100% weight of peels (after boil) some granulated sugar (for rolling) 【作り方】 1、夏みかんをよく洗う。 2、チーズおろし器で表皮を薄く削る。苦味が少なくなります。 3、頭部のヘタを切り取る。 4、十字に切れ目を入れ、皮を4つにむく。 5、皮を1cm幅位に切り分ける。 6、鍋に切り分けた皮と、たっぷりの水を入れて火にかける。 7、煮立ったら湯を捨てて水に取る。これを3回繰り返す。 8、最後(3回目)は20~30分煮て皮に砂糖が浸透しやすいように、十分やわらかくしておきます。 9、一晩水にさらして苦味を抜く。 10、翌日、もう一回水を換え、3時間置く。 11、ザルに上げて重さを計る。 12、皮の重さと同量か8割の砂糖を計る。今回の材料の重さは437gだったので、350gの砂糖を準備しました。(80%) 13、鍋に皮と砂糖の1/3を入れて火にかける。煮立ったら弱火にする。 14、時々かき混ぜながら、15~20分煮る。 15、再び砂糖の1/3を入れてもう15~20分煮る。皮が固くなるので、こうして分けて入れます。 16、箸などでかき混ぜるとちぎれるので、時々鍋をあおって砂糖が均等にまわるようにする。 17、三度目の砂糖を入れて、もう15~20分煮る。 18、皮に透明感が出てきたらOK。 19、煮詰めた夏みかんの皮を、ザルにとって蜜を落とす。 20、ある程度冷めたらグラニュー糖をまぶす。 21、ザルに入れて振り、余分なグラニュー糖を落とす。 22、皿にオーブンシートを敷き、その上にまっすぐに伸ばして並べる。4~5時間置いて乾かす。皮を上にして干した方が乾きやすいです。扇風機を使えばさらに効果的。 23、乾いたら完成。密閉容器に入れて涼しいところに置けば、3~4週間位持ちます。冷蔵庫に入れるとべちゃべちゃします。 メモ:ピールはそのまま食べたり、チョコレートに浸してオランジェットにしたり、ケーキやクッキー、パン作りなどに利用できます。 【Recipe】 1、Wash all citrus well. 2、Grate orange skin slightly using a cheese grater. 3、Remove stems from oranges. 4、Score the skin into quarters and remove the skin. 5、Cut the skin into strips about 1cm wide. 6、Place the peel in a saucepan, cover it with cold water and bring to a boil. 7、Drain and rinse the peels. Repeat this process 2 more times. 8、The last time, you should boil for 20-30 minutes. This boiling process allows the peels to soften and become more porous, allowing more sugar to be absorbed. 9、Cover peels with cold water and let soak overnight. This will help to remove bitterness. 10、The next day, change the water and let it 3 hours. 11、Drain and weight the peels on a scale. 12、Prepare sugar of 80% or 100% weight of peels. This time the peels weighed 437g, so I used 350g of sugar.(80%) 13、Add peels into the saucepan and add 1/3 of the sugar. Bring the mixture to a boil. 14、Simmer on low heat for 15-20 minutes and stir occasionally. 15、Add 1/3 of the sugar and cook 15-20 minutes again. 16、If necessary swirl the pan to make sure that all of the peels get covered with the syrup. 17、Add the rest of the sugar and cook. 18、All the end of this period, the peels should be translucent. 19、Drain the syrup off the peel. 20、Let cool slightly. Roll the citrus peel in the sugar until well coated. 21、Sieve to remove any excess sugar. 22、Place peels to a plate on a cookie sheet. Let stand until coating is dry, about for 4-5 hours. 23、Store in an airtight container and they should keep for a few weeks.
