Kozhi Varuval /Spicy Chicken Fry is fresh ,quick,easy ,scrumptious chicken recipe.It resembles the popular Chettinad delicacy Kozhi Uppu Uruval.Though most of the Chicken dishes are known for its blend of fresh spices, this one is different and simple.This dish uses absolutely no spice powders garam masala, Chilli powder etc. As a result, the natural flavors of the meat is highlighted. The recipe uses very few ingredients which are the key to the final taste of the dish. So it is absolutely essential to use those without substituting. This includes fennel seeds,shallots, curry leaves and dry red chilies.Spiciness can be adjusted as per your preference. This spicy curry couples up great with simple rasam or curd rice but with pulao too.This fry takes only 15 to 20 minutes to cook and tastes so good when it is served hot.Also the red chilly in the fry goes very well with curd rice. It is basically a dry preparation and the chicken gets cooked with the moisture it leaves. This kozhi varuval can be prepared using Naatu Kozhi (country chicken) .Pressure cook for 2 whistles and then follow the same procedure.
