Learn how to make my version of Potato Salad to take to a bbq, potluck, party or if you have a large family. I have entertained a lot over the years and have cooked for 100 + people by myself on many occasions. Therefore, I know about making large quantities and I am happy to share my cooking skills with you. This makes a lot but can be easily halved for a small family! For 100 people, I would double or triple this recipe even if there are other side dishes(and I usually have about 5 sides minimum). Makes one small aluminum tray. Some people like finely diced pickles in their potato salad to give it that extra tang, so feel free to add to your taste. Always adjust any recipe to your liking since you may have known a different version. I keep my recipe as close to the version Mummy made when we were growing up in Trinidad several decades ago.
